›Recipe Thursday - Lentil Pilaf with Roasted Veggies

This is a nice light dish. And very simple to make! It is great served with hummus and pita bread and a nice Pinot Grigio! Serves 2 as a main dish, 4 as a side dish.
1/2 cup dried lentils
1/2 cup brown rice
2 cups vegetable broth
1 Tbsp lemon juice
1 tsp cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp lemon pepper
1/2 tsp italian herb mix (or other herb mix)
salt to taste
yellow squash
zucchini
red bell pepper
green beans
Combine lentils, rice, broth, lemon juice, and spices in a sauce pan. Bring to a boil. Reduce to simmer. Cook about 40 minutes or until all liquid is absorbed and rice and lentils are tender.
Coat a roasting pan with non-stick cooking spray and add chopped vegetables. Drizzle lightly with olive oil and sprinkle with fresh cracked pepper and sea salt. Toss well to coat. Broil until vegetables are tender and lightly browned.
Serve veggies over rice pilaf. Enjoy!
